Chili

So, remember the last time I posted about food?  Bruschetta Chicken Bake?  I went on and on?  Well, I made it a second time and I thought to myself, "was I just really really hungry when I so enjoyed it the first time?"  I mean, it's still a nice quick meal, but nothing to blog about.  So I implemented a new rule.  I will not write about a recipe on this blog until I have tried it twice.  

Fast forward several weeks.  I tried this chili and wanted to blog about it right away.  I restrained myself, thanks to my new rule, but I have now made it twice and it was just as delicious in the second go round.  So here's the link to Nook and Pantry, the blog where I found the recipe.  Warning: it is SPIIIII-CY.  For an equally tasty (probably more so), less sweat-inducing chili (yes, I've made it twice) check out Heather Bassett's Texas Red Chili recipe on my recipe blog.  

Oh, and can recommend using avocados as a garnish?  I never would have even tried it, but I just happened to have some leftover avocado and it was delish.  I will forever have them on hand now when I make chili.

I'm not gonna lie, I have a pretty fabulous chili recipe that I made up. And I once read an article on chili in a Martha mag that recommended avocado as a garnish and I use it everytime too. (and fritos cuz I'm high class.)

B/c I could never get my husband to eat anything that is SPIIIII-CY, I had a look at the other recipe. But I have to say, there are just way too many ingredients for one meal. I mean, I've been waxing domestic lately and all, but this could be a bit over the top for me. It sounds good though, so I mean, I'm sad about it.

I love avocado so much, I think I could use it as a garnish for everything. I will definitely try this one. Question, did Max eat it?

No. Even when I just took a plain bean and gave it to him he whimpered, pointed to his mouth and said, "hurt." I'm not joking about spicy. One thing you could do - and you too KA - is just cut down on the chili powder. It calls for 1/4 cup, which is a lot. Try 1 TB instead. And maybe half as many chipotle peppers.

Also KA, the Texas Chili does have a lot of ingredients, and some are hard to come by. Maybe when you come for Boston Cream pie, I'll make the chili too and you can decide if it is worth your efforts :)

Okay now that you have written this I have to admit that the bruschetta chicken wasn't my fave. : ) I'll bet the chili is yummy, but I'll bet it also has bacon in it!
